Coppo is one of the historic houses of Canelli: founded in 1892 by Piero Coppo and still run by the family, it ages its sparkling wines in underground cellars carved into the tuff, the "underground cathedrals" listed as a UNESCO World Heritage site. The Brut named after Luigi Coppo, who rebuilt the winery after the 1948 flood, is the entry-level Alta Langa traditional-method wine of the range.
The grapes come from hillside vineyards between 270 and 450 metres, on marine sediments and chalky marls, farmed according to integrated principles. The base wine ferments in steel, then undergoes its second fermentation in bottle by the traditional method and rests at least 30 months on the lees before disgorgement.
The 2022 is straw yellow with green highlights and a fine bead. On the nose, apple, bread crust and yeast; the palate is dry and mineral, with lively, citrusy acidity and a creamy mousse. Perfect as an aperitif, with cured meats, marinated anchovies, fried squid and steamed scampi.
