Es is the wine that rewrote the image of Primitivo. Gianfranco Fino and his wife Simona started out in Manduria with a few hectares of old bush vines, and within a few years this red became a cult wine, one of the most sought-after in Southern Italy. The name comes from Freud's Es, the id: instinct, passion without rules.
The grapes come from bush-trained vines on red soils between Manduria and Sava, hand-picked in late August with bunch selection. After two to three weeks of maceration in steel with daily délestage, the wine ages for about nine months in oak and is bottled without fining.
The 2016 now has some years in bottle: alongside rich ripe black fruit, plum and black cherry come spice, cocoa and the first evolved notes. Powerful and velvety, with its high alcohol well integrated. With braised meats, game, aged cheeses, or simply for meditation.
