Ballabio is a Casteggio winery in Oltrepò Pavese with roots going back to 1905, when Angelo Ballabio was among the area's sparkling wine pioneers. The current project, launched in 2000 by the Nevelli family, is devoted exclusively to traditional-method Pinot Noir. The name Farfalla comes from a vineyard on the San Biagio hill that is shaped like a butterfly on the land-registry map.
The grapes, hand-picked from vineyards between 300 and 400 metres on calcareous clay soils, are whole-bunch pressed; the base wine ferments in steel with a share of reserve wines. The second fermentation takes place in bottle, with at least 30 months on the lees.
A dry, taut Blanc de Noirs with white fruit, citrus, bread crust and fine depth. In magnum format, ideal for parties and big tables: as an aperitif, with raw fish, risotto, fried food and Oltrepò salumi.
