Centinari is the Franciacorta brand of the Togni family, a wine group founded in 1954 by Luigi Togni and now run by his daughter Paola. The winery is in Capriolo, on the hills between Lake Iseo and the Oglio river, and its emblem is the purple heron of the area's protected wetlands. In the range, the Dosage Zéro is the purest, driest interpretation: no sugar added at disgorgement, just Chardonnay fruit and the work of the yeast.
The grapes, 100% Chardonnay, come from medium-textured moraine soils with a balance of sand and silt, trained to Guyot and spurred cordon. Harvest starts in mid-August at dawn, with selection in the vineyard and in the cellar. After pressing, the base wine ferments at low temperature and stays in stainless steel for about 7 months; after the second fermentation it ages on average 28 months on the lees, with repeated manual bâtonnage. Residual sugar below 2 g/l.
Very fine, abundant bead and a pale colour with golden glints. The nose is gentle, with ripe fruit, a hint of vanilla and a toasty touch from the lees; the palate is savoury, fresh and harmonious, with light tropical fruit notes. Perfect with perch cutlets, pike in green sauce or beef in olive oil; serve at 8-9 °C.
