Ballabio is a long-established house in Casteggio, in the classic area of Oltrepò Pavese, and today one of the leading names in Lombardy's Pinot Noir-based traditional-method sparkling wine. Farfalla is its signature vineyard, the first devoted to sparkling wine, and La Parcelle is its most exclusive selection.
The grapes come from a single north-west-facing section of the vineyard, chosen to preserve freshness and elegance in the Pinot Noir. After the second fermentation the wine spends many years on the lees and is disgorged with no added liqueur, as a zero dosage: a vintage traditional-method wine that relies entirely on the purity of the fruit.
The 2015 combines complexity and tension: bread crust, dried fruit, candied citrus and small red berries, very fine bubbles and a long, savoury finish. A sparkling wine for the table rather than the aperitif, with raw seafood, shellfish, fried fish or risotto.
