Frescobaldi has been making wine in Tuscany for over seven hundred years. Éternelle is the vintage Metodo Classico of Castello Pomino, in the Florentine hills: it comes from the Chardonnay of the Leonia vineyard, at 700 metres above sea level, where the temperature swings give acidity and finesse.
The 2014 is a Pomino Spumante Metodo Classico made from 100% Chardonnay. After the second fermentation it rests eight years on the lees, followed by disgorgement in June 2023 and further ageing in bottle before release.
Bright golden colour with a fine, persistent perlage. On the nose citrus, peach, apricot and yellow apple, with floral notes, hazelnut, almond and hints of bread crust and pastry. The palate is elegant and creamy, fresh and savoury, with a rich, complex finish. Excellent with shellfish, baked fish and refined dishes, or on its own for special occasions.
