Tommasi is one of Valpolicella's historic families: the estate was founded in 1902 in Pedemonte, in the heart of the Classico zone, and has long been a benchmark for Amarone. It works only with grapes from its own vineyards, on some of the appellation's finest hills. The Ripasso is the wine that links everyday Valpolicella with the world of Amarone.
The grapes – Corvina, Rondinella and Corvinone – come from three family hillside vineyards, Conca d'Oro, La Groletta and De Buris, densely planted and low-yielding. After fermentation in steel, the wine is "re-passed" over the still-warm Amarone skins for about twelve days, then ages 18 months in large Slavonian oak casks and a few months in bottle.
The result is an intense ruby red, spicy on the nose with black pepper, raisin and ripe berries; the palate is full and soft, with ripe cherry, hints of orange peel and chocolate, and firm yet lively tannins. Excellent with Amarone risotto, red meat, bollito misto and aged cheeses such as Monte Veronese.
