Bronzato is a winery in Verona whose vineyards sit on the hills north-east of the city, between 300 and 500 metres above sea level, on limestone-clay soils with plenty of rock. Ripasso is the wine that best tells the story of the territory: a Valpolicella that gains structure and complexity from the dried Amarone pomace.
The 2019 Ripasso Superiore is made from 70% Corvina, 20% Corvinone and 10% Rondinella. After fermentation the Valpolicella is re-fermented on the dried pomace, then the wine matures for 12 months in oak casks and 6 months in stainless steel before bottling.
Bright ruby red with garnet highlights, with cherry, plum and spicy notes on the nose; on the palate it is savoury and well structured, with a dry finish. It pairs with red meat, roasts, rich pasta dishes and aged cheeses.
