Tenute Al Bano Carrisi lies at Cellino San Marco, in Salento, the singer's home town, where he has built a real farming estate with vineyards, winery and hospitality. Bacchus is his pure Primitivo, named after the Roman god of wine.
The grapes come from vines around forty years old, trained as traditional Apulian bush vines on calcareous clay soils with fine sand. After fermentation in steel the wine matures for about eight months in French oak barriques.
The 2013 is now more than ten years old: the Primitivo has lost its youthful exuberance and shows ripe and spirit-soaked fruit, prunes, spice, cocoa and tertiary notes of leather and tobacco, with a soft, enveloping palate. A mature bottle that also makes an intriguing gift. With meats in sauce, braises, orecchiette with ragù and aged cheeses.
