Ciman 2019 - Elio Sandri

Unlike Barolo, which requires aging in wooden barrels, Ciman 2019 follows an unconventional winemaking process: fermentation takes place in concrete tanks, a method that preserves the freshness and authenticity of Nebbiolo. The wine ages for about 48 months in concrete, without the use of wood, to keep the purity of the fruit intact. After aging, the wine is bottled and rests further before being released for sale.
