Colore is the flagship wine of Bibi Graetz, the Fiesole artist and winemaker who built his style on old Tuscan vineyards. The 2019 vintage celebrates his twenty years of harvests and carries a dedicated anniversary label: he describes it as the culmination of a journey that began with the pursuit of concentration and arrived at elegance.
It comes from old vines in three different areas, Lamole, Vincigliata and Siena, on poor, sandy and stony high-altitude soils, picked in many passes. Spontaneous fermentation with native yeasts, then about twenty months in new barriques, with each parcel aged separately before blending.
2019 had a dry spring and an even summer, leading to slow ripening and an excellent balance of sugar and acidity. The result is a deep yet fresh red, with cherry, plum, spice and a hint of cocoa, fine tannins and great length. One of the Tuscan reds most sought after by collectors. With steak, game and aged cheeses.
