Dom Pérignon is named after the Benedictine monk of Hautvillers Abbey who, in the late seventeenth and early eighteenth centuries, played a decisive role in the art of blending in Champagne. It is the prestige cuvée of Moët & Chandon and is made only in vintages deemed worthy: it is always a vintage wine.
The 2012 is an almost equal blend of Pinot Noir and Chardonnay, aged for years on the lees before disgorgement. Chef de cave Vincent Chaperon described it as a vintage of contrasts: a difficult winter and spring, with frost, hail and disease, followed by a sunny summer that saved the harvest.
In the glass it is bright and intense: apricot, citrus, white flowers, toasted bread and a hint of ginger and tobacco, over a taut, concentrated and mineral palate. One of the most iconic Champagnes in the world, to open for a real occasion, with shellfish, raw fish or spiced dishes.
