Ballabio is a long-established winery in Casteggio, in the Oltrepò Pavese, which in recent years has focused entirely on traditional-method sparkling wine from Pinot Noir, a grape with a long sparkling tradition in these hills. The Farfalla range, and the Noir Collection in particular, is the heart of this production.
This rosé is pure Pinot Noir, refermented in bottle and left on its lees for a long time, around thirty months. The Extra Brut dosage keeps it dry and taut, letting the fruit and freshness of the grape speak.
Pale pink, with a fine, persistent mousse. The nose shows red berries, peach and a hint of bread crust; the palate is dry, savoury and long. Excellent as an aperitif, with raw seafood, shellfish, delicate cured meats or sushi; a serious Italian alternative to rosé Champagne.
