Dr. Fischer is a historic estate in the Saar, the side valley of the Mosel where Riesling reaches some of its most taut and crystalline expressions. Since 2014 it has belonged to the Foradori-Hofstätter family, owners of the renowned Alto Adige winery in Tramin, who have given new impetus to the work in vineyard and cellar.
Ockfener Bockstein is one of the best-known vineyards of the Saar: steep slopes and slate soils, with a cool climate that ripens the grapes slowly and preserves lively acidity. Kabinett is the lightest ripeness level of the German Prädikat system: delicate, low-alcohol wines with residual sugar kept in balance by freshness.
The 2020 weighs in at just 9% alcohol: green apple, citrus, white flowers and the flinty mineral note typical of slate. The palate is light, with a gentle touch of sweetness that the acidity keeps flowing. Perfect as an aperitif, with raw seafood, mildly spiced Asian dishes or fresh cheeses.
