Castello della Sala is the Antinori family's Umbrian estate, a 14th-century fortress about 18 kilometres from Orvieto, acquired by the family in 1940. It is best known for its whites, starting with Cervaro, but since 1990 it has also made this Pinot Noir, an unusual bet for central Italy at the time.
The Pinot Noir comes from about four hectares at 400 metres, on calcareous soils rich in marine fossils and Pliocene sedimentary sands. After a short cold maceration and fermentation in small stainless steel vats, the wine goes through malolactic and ages for several months in barriques, then rests in bottle in the castle's historic cellars.
The 2021 is elegant and refined: small red berries, cherry, floral notes and light spice, with silky tannins and good freshness. Serve with white meats, duck, mushroom dishes or salmon.
