Tenuta Fornace is a small estate in Rovescala, in the Oltrepò Pavese, farmed organically and biodynamically and a member of the VinNatur association. The approach is that of natural wine: spontaneous fermentations, no fining or filtration, no additives.
Peparino is the estate's Pinot Noir, from vineyards between 240 and 380 metres in the villages of Rovescala and Mornico Losana. It ferments with indigenous yeasts only in stainless steel, with about a week of skin contact, and then ages for a few months on its fine lees in steel and French oak barriques.
The name comes from the black pepper note that accompanies the red fruit, cherry and raspberry, in a fresh, flowing and very drinkable red. Serve slightly cool with cured meats, pasta with ragù, white meats and grilled dishes.
