Centinari is the Franciacorta estate of the Togni family, in the wine business for three generations: it lies in the commune of Capriolo, in the heart of Franciacorta, surrounded by greenery between Lake Iseo and the hills. The house symbol is the purple heron that lives in the area's protected wetlands. The Brut is the benchmark Franciacorta of the range, alongside the Satèn, Rosé, Dosage Zéro and the Testanera Riserva.
It is a blanc de blancs: pure Chardonnay from a double-checked must, refermented in bottle by the classic method. It spends 28 months on the lees, well beyond the legal minimum, which gives it its aromatic depth.
Abundant mousse and fine, persistent bubbles, straw yellow with golden glints. The nose is fresh, assertive and lightly spicy, rich in yeasty fragrance, with apple, citrus and bread crust; the palate is balanced and structured, with good savouriness and freshness. Perfect as an aperitif, with raw seafood, fried lake fish and delicate risottos. Serve at 8-9 °C.
