Il Pareto is the pure Cabernet Sauvignon of Tenuta di Nozzole, owned by Ambrogio and Giovanni Folonari in Chianti Classico, in the commune of Greve in Chianti, where vineyards alternate with olive groves, woods and small lakes. The first vintage was 1987, making it one of the Tuscan Cabernets with the longest track record.
Winemaking aims to extract without forcing, with measured macerations and pump-overs in stainless steel to avoid hard tannins. The wine then ages for about 24 months in French oak barriques.
2017 was a very hot, dry year, with harvest about three weeks earlier than usual: the result is a powerful, concentrated Pareto, as its alcohol suggests, with ripe black fruit, cocoa, incense, leather and vanilla. A red of great structure to pair with game, braised meats and long-aged cheeses.
