Coniale is the pure Cabernet Sauvignon of Castellare di Castellina, Paolo Panerai's estate best known for the Sangioveto of I Sodi di San Niccolò. First made with the 1987 harvest, it takes its name from the vineyard it comes from, at Castellina in Chianti.
The vineyard lies at 350 to 400 metres on fine, stony soils. After fermentation in stainless steel the wine ages for 18 months in barriques, half of them new, and about ten months in bottle. The house's stated aim is a Cabernet that favours elegance over power, and the altitude of Chianti Classico helps.
2013, a cool vintage in Tuscany, gave a Cabernet with good tension which, after more than ten years in bottle, has absorbed its oak: blackcurrant, cherry, herbal and balsamic notes, tobacco and leather, with tannins now softened. With roasts, lamb or aged cheeses.
