Castellare di Castellina is Paolo Panerai's estate at Castellina in Chianti, known for its Sangiovese and for its bird labels, a different one every vintage. Alongside the Chianti wines it makes two high-level international reds: the Merlot Poggio ai Merli and Coniale, a pure Cabernet Sauvignon made since 1987.
The vineyards lie at 350 to 400 metres on fine, stony soils. Vinification aims for elegance rather than power; the wine ages for 18 months in barriques, half of them new, then around ten months in bottle.
The 2018 is a Cabernet of clear, fresh fruit: blackberry, currant, blueberry, spice and a touch of cocoa, with silky tannins and a long finish. A Chianti Classico Cabernet that is finer rather than muscular. With steak, roasts, game and aged cheeses.
