Centinari is the Franciacorta house of the Togni family, a wine group founded in 1954 by Luigi Togni and now run by his daughter Paola. The winery is in Capriolo, in the heart of the appellation, and its emblem is the purple heron of the area's protected wetlands: hence the name of the Ardea Collection line, in which the Satèn is the softest, silkiest expression.
It is a Blanc de Blancs made only from Chardonnay, grown on medium-textured glacial moraine soils with a balanced mix of sand and silt. Grapes are picked from mid-August, at dawn; after pressing, the wine ferments at low temperature in stainless steel and, after bottling for the second fermentation in spring, rests about 42 months on the lees with manual bâtonnage. As Satèn rules require, it has lower pressure than other Franciacorta; the dosage is Brut (5.5 g/l).
In the glass it is bright yellow with golden glints and a fine, persistent bead. The nose shows fresh fruit and white flowers with a hint of almost toasted dried fruit; the palate is creamy, fresh and savoury, with a long finish. Excellent with seafood risotto and crisp fried baby octopus, served at 6-8 °C.
