Cervaro della Sala is Antinori's most famous white and one of Italy's great white wines. It comes from Castello della Sala, a medieval castle near Orvieto, and takes its name from the Monaldeschi della Cervara family, who owned the castle in the fourteenth century. The first vintage was 1985.
It is a blend of Chardonnay with a small share of Grechetto. After brief cold maceration on the skins, the Chardonnay ferments and undergoes partial malolactic fermentation in barrique, where it stays for about five months; the Grechetto, vinified separately without oak, adds freshness and savouriness. The wine then rests for several months in bottle in the castle cellars.
2023 brought a mild winter and a rainy spring, followed by a warm summer with good day-night temperature swings and steady ripening. The result is a fresh, refined Cervaro: acacia blossom, bergamot, citron, ginger, hints of toasted bread and flint, with a savoury palate finishing on tropical fruit and roasted hazelnut. Already good, it will grow in bottle for years. With shellfish, risotto, baked fish and white meat.
