Tenuta Fornace is a certified organic estate in Rovescala, in the Oltrepò Pavese, combining organic and biodynamic farming in the vineyard. Alongside traditional reds it makes skin-contact whites, bottle-fermented wines and wines from dried grapes, all with spontaneous fermentation.
Tutto Sole is its orange wine: a skin-contact white from Moscato and Malvasia grown at around 290 metres on calcareous, lightly clayey soils facing north and north-east. Harvest is late and by hand into small crates. Fermentation starts spontaneously with native yeasts in steel tanks and the must stays on the skins for 75 days; the wine then rests for a few months on its lees, again in steel. It is unfined and unfiltered, with no additives and no added sulphites.
The name, the winery says, comes from the sun having "done everything", giving the wine its golden colour. In the glass it is deep straw yellow, with balsamic and citrus aromas and small hints of rosemary; the palate is dry, intense and very persistent. Serve at about 12 °C, excellent as an aperitif and with cheese, especially blue cheeses.
